Lemon ricotta pancakes with blueberries.

1 cup ricotta
2 eggs
1 cup buttermilk
1 tbsp lemon zest
5 tbsp sugar
1 tsp baking soda
1 cup four
1/4 tsp salt
1 tbsp powdered sugar
1/2 blueberries
1 tbsp lemon juice

Combine ricotta, eggs, buttermilk, zest, sugar, baking soda, flour, and salt in large bowl. Mix until well incorporated. Cook on griddle over medium heat until done.

Combine lemon juice, blueberries powdered sugar and layer between cakes. Top with powdered sugar and lemon zest

This just makes me happy!!!
