My Saturday morning baked avocado eggs
This is the easiest dish to make, and it's incredibly filling. Slice an avocado in half. Scoop out a spoonful of avocado from each slice to make a well deep enough for an egg. Crack an egg into each we'll. Bake for 12-15 minutes at 425 degrees. Then top with anything you want, like herbs or cheese or bacon. And don't forget to salt and pepper to taste. I also add red chili flakes for heat.
