Farro and Roasted Mushrooms

Farro boiled with minced shallots and garlic, two bay leaves, salt, and a healthy shake of dried thyme. Cook until al dente. While that cooks, roast shiitake and oyster mushrooms tossed with olive oil, salt, and lemon juice at 425 until crispy.
