Dinner inspired by a freeze dried meal: coconut rice and beans.
Cool rice in coconut milk (rather than water). Meanwhile, warm a can of rinsed black beans with a glug of evoo, a pinch of cayenne, and a pinch of cumin. Bonus points if you top with kale chips. To prepare kale: warm oven to 425 F and massage kale with evoo, salt, and pepper.
When all components are complete, combine, serve, and be joyful. 😊
