French onion soup!

I caramelize my onions for hours until they're dark tan and then season my soup with worcestershire, Dijon, good red wine and herbs de Provence. I use only beef stock as additional broth and top with aged provolone and gruyere cheese. Also, homemade croutons for the top :)!
