Really easy ricotta roast with pears and honey!
2 thick slices of whole wheat bread
1 teaspoon butter
2 tablespoons ricotta cheese (preferably goat's milk ricotta)
1 small blood orange
2 medium pears
1-2 teaspoons honey
Flaky sea salt, for serving
1 tablespoon extra virgin olive oil
Prepare Ingredients: Preheat oven to 350ºF. Butter both sides of the bread and set aside. Juice and zest the orange. Trim the top off the pears and thinly slice lengthwise.
Toast the Bread: Transfer the bread slices to the oven (on a piece of aluminum or in a small oven-proof skillet) and cook until toasted on both sides, about 5-8 minutes.
Prepare the Ricotta Cheese: While the bread is toasting, prepare the ricotta cheese. In a small bowl, combine the ricotta cheese, orange juice, and orange zest and stir until smooth and creamy. Set aside.
Cook the Pears: Heat 1 tablespoon extra virgin olive oil in a medium skillet over medium high heat until very hot. Add the pears, cooking in batches if necessary, and cook without moving for 1-2 minutes until browned. Gently flip and cook another 1-2 minutes until browned all over. Remove from heat.
To serve: Place the toasted bread on a plate and divide the ricotta between both toasts and use a knife to spread it evenly on the bread. Arrange the fried pear slices on top. Drizzle a bit of honey on top and finish with a bit of flaky sea salt. Enjoy!
