Mix 6 tbsp sunflower seeds, 6 tbsp pepitas, 6 tbsp sesame seeds, 4 tbsp chia seeds, 3 tbsp flax seeds in a food processor (reserve 3 tbsp of seed mixture).
In a separate bowl, mix 1 1/2 cups almond meal, 2 tbsp gluten-free flour of choice, 1 tsp baking soda. Add ground seed mixture and blend.
To the dry ingredients add 3 eggs, 3/4 cup milk of choice, 1/3 cup olive oil, 1 tbsp agave nectar, 1 tbsp apple cider vinegar and 1/2 tsp salt.
Blend mixture, let rest for ~ 5 minutes. Pour and spread in parchment lined bread pan. Top with reserved seed mixture. Bake for 50 minutes at 350• F
