Velvety Celery Soup | Sweat celery + kale + chickpeas + potato for 10 mins. Add stock or water. Simmer for 30 mins. Blend and (partially) strain. Add (soy) milk + water as desired. Season with salt + pepper + nutritional yeast + everything bagel seasoning + lemon. (Zero Waste Tip: Use strained soup pulp to make patties by mixing with crushed crackers + seasonings and bake at 350F).
