Indian aloo jeera (cumin potatoes): add cumin seeds and a pinch of asefoetida (optional) to ghee/butter. When sizzling, sauté leftover boiled potatoes (cut into cubes) with curry powder, salt, cayenne and minced ginger. Finish with cilantro and squeeze of lemon juice. Tasty with naan, lentils and rice or on toast.
