Roasted curried fall vegetables with white beans: toss brussel sprouts, purple carrots, and butternut squash with olive oil, squeezed lemon, curry powder, and salt and pepper. Roast at 400 until tender. Toss with cannelini beans, shallots, and minced parsley.
