Creamed kale gratin: cook chopped kale (can sub with chard, or any other sturdy greens) in lightly salted water for 7-8 min. Drain and squeeze some of the water out. Sauté pepper flakes and grated garlic in butter and olive oil. Add one minced shallot or some onion. Add boiled kale, some heavy cream, S&P, pinch of nutmeg. Cook for 7-8 min till cream is reduced. Can eat as it (creamed kale). To gratin-it, pour into a baking dish, shower with panko and broil for 3-4 min till top is brown.
