Pasta with butternut squash, chicken and spinach.
Sauté chicken in pan with onions and garlic until nearly cooked through. Add one can of oureed butternut squash (ex. Trader Joe’s), half can or full can of chicken stock, your choice of pasta cooked al dente, and a handful of spinach. Mix together and right before serving throw in some grated Parmesan cheese. Dinner in 20 minutes.
