Mmmm pizza. This isn’t your thin crust style pie, this is fluffy, chewy, crusty deliciousness. I hadn’t made pizza from scratch in years, and this turned out so so good: fresh mozzarella and ricotta, basil, pepperoni, and a sprinkling of chives. I’m not one for a real sauce, I prefer crushed tomatoes sprinkled with salt, pepper, oregano and thyme. I may have decided a bit late in the day to make this, so ended up only having about 2 hours to let it rise, rather than the 5-6 hours the recipe called for. A little (or a lot) of extra yeast, and honestly it was perfect.
