Christmas fish stew. 1 quart seafood stock or chicken stock or vegetable stock. Sautéed mirepoix and a bit of garlic. Bring to a simmer and toss in 2 bags of Trader Joe’s frozen “Seafood Blend”. Bring back to a simmer. Add about a cup each of chopped red/yellow/orange bell pepper and chopped fresh parsley. Simmer for about 10 minutes. Drizzle generously with olive oil. Top with grated Parmesan/Romano. Serve with crusty bread, pasta or zoodles.
