Risotto giallo con funghi ...

This is a twist on traditional risotto ai funghi.

Cook saffron risotto in usual manner i.e. wilt finely chopped onion in mixture of butter and olive oil then add carnaroli rice (roughly a cup for two hungry people) swirl until gleaming. Add glass of good dry one (and pour one for yourself too if you like). Once wine evaporated add hot chicken broth a ladleful at a time until rice al dente. Then add a healthy knob of butter and generous grating of fresh parmigiano. While cooking rice in separate pan fry sliced mushroom (nice big meaty ones best) in olive oil and one crushed garlic clove. Reserve. Now serve your golden risotto in dishes making little well in center and pop mushrooms in there. Sprinkle mushrooms with freshly chopped Italian parsley and dust with light shaving of parmigiano. Enjoy!!
