So I teared fresh baby spinach sautéed separately then put to the side. Cube to medium size on the vine red tomatoes put in a small bowl to the side add sea salt fresh ground black pepper dried Italian seasoning and some extra-virgin olive oil, lightly toss. In a separate bowl crack four large eggs at approximately 4 to 6 tablespoons of water with them as if for scrambled eggs. Add sea salt and fresh ground black pepper to the egg mix be careful not to over salt as you will be adding grated Parmesan cheese. Add some dried Italian seasoning if you want a little heat dried red chili flakes a little goes a long way. You need to have a 5 ounce tub of fresh grated Parmesan cheese add at least an ounce to the egg mixture probably 2 ounces mix that all up with your sought your pepper your Italian seasoning put that to the side. Get a 9 x 9 baking dish and if it’s metal be sure you grease it with some olive oil. I even do that for my glass and ceramic baking dishes. Layer your tomato mixture on the bottom of the baking dish now go ahead and mix the sautéed baby spinach into your tomatoes. Take this layer in the bottom of the baking dish then take more of the grated Parmesan cheese do a nice layer across and finish by pouring your egg mixture on top. Bake at 350° for 30 to 40 minutes depending on your oven. #Enjoy
