Japanese-style Potato Salad!
4-5 medium-sized russet potatoes
2 medium-sized red onions
1 japanese cucumber
1 hard boiled egg
Slice onions & place in a bowl. Sprinkle some salt & mix. Let it stand for 15-20mins, then remove the moisture. Do the same with the japanese cucumber.
Cut the potatoes into chunks & add to a pot with the carrot. Fill pot so it just covers the vegetables & bring to boiling simmer. Boil/simmer for 10-15mins or until potatoes can be easily pierced with a fork.
Slice boiled carrot & roughly chop up the boiled egg.
Dish out potatoes & add to large mixing bowl. Add sliced onions, cucumbers, carrot & boiled egg.
Add liberal lashings of kewpie mayonnaise & stir the mixture well.
Add pepper to taste. Eat immediately or let cool & refrigerate for later 😄
