This is our family recipe for banana bread, which I have tweaked just a little over the years. It's unusually moist--—almost breadpudding-esque. I like to toast it, saute it, and smear it with spreads sweet and savory. But my favorite way to eat it is sauteed with some caramelized bananas, a pour of flaming whisky sauce, and a dollop of whipped cream or creme fraiche. - ALittleZaftig —ALittleZaftig

This recipe garnered a "WOW" rating from me and my family. It's a wonderfully decadent way to gussy up banana bread. I've never thought of sauteeing it before, so that alone was a revelation; adding the caramelized bananas, the whisky sauce, and the whipped cream pushed this way over the top. If you are afraid of cooking with fire (or have young kids standing next to you at the stove), you can turn the heat off right before you add the whisky—you won't have flames, but you'’ll still end up with a delicious sauce and a seriously amazing dish. - WinnieAb —WinnieAb

  • Banana Bread
  • 1/4 cup shorterning
  • 1/2 cup unsweetened apple sauce
  • 2 cups sugar
  • 2 eggs
  • 3 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup whole milk
  • 1 teaspoon vinegar
  • 2 teaspoons vanilla extract
  • 3 large overripe bananas, mashed until they are liquid

  • 1 cup heavy cream or creme fraiche
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons butter
  • 4 thick slices banana bread
  • 3 tablespoons butter
  • 1/4 cup brown sugar
  • 2 bananas, sliced
  • 1 pinch salt
  • 3 tablespoons butter
  • 1/2 cup Irish whisky
Directions
  1. Banana Bread
  2. Preheat your oven to 375 degrees F. Grease and flour two bread pans.
  3. Cream the shortening and the sugar. Add the applesauce and eggs and mix thoroughly.
  4. Add the vinegar to the milk and let it rest for a minute.
  5. Sift the flour, baking soda, and salt.
  6. Add half the flour, half the milk, the remaining flour, and the remaining milk, mixing gently between additions. Do not overmix.
  7. Add the liquid bananas and vanilla and mix to combine. Do not overmix.
  8. Divide the batter evenly into the loaf pans and smooth the tops. Bake for 40 to 50 minutes, or until a toothpick inserted into the center of a loaf comes out nearly clean. Do not overbake. This banana bread should have an almost creamy texture. Cool in the pans for 10 minutes. Then run a knife around the bread and remove from the pan to cool completely.
  1. Sauteed Banana Bread with Caramelized Bananas, Flaming Whisky Sauce, and Whipped Cream or Creme Fraiche
  2. Whip the cream or creme fraiche with the sugar and vanilla extract and reserve in the refrigerator. In a large skillet, melt 3 T. butter over medium heat. Add the slices of banana bread in a single layer. Fry them until they are golden brown. Flip and fry the other side. Remove them to serving plates.
  3. Add another 3 T. butter to the pan and allow it to melt. When it is sizzling, add the brown sugar and stir it into the butter. When it is melted, add the bananas and the pinch of salt. Saute the bananas on both sides until caramelized, giving them a gentle flip. Spoon a few slices onto each serving of banana bread. Add another 3 T. butter and allow it to melt. Pour the whisky into the pan and reduce a bit, until it is beginning to get syrup-y. Light it aflame carefully. When the flames subside, spoon some of the sauce over the bread and top with a dollop of whipped cream or creme fraiche. If you would like to flame the whisky sauce tableside, serve the sauteed banana bread with the caramelized bananas. Then light the whisky sauce in a chafing dish and spoon it onto individual servings. Pass the whipped cream separately.

I didn't do the sauce but made the banana bread, since I am on a hunt for the perfect recipe. This one was the best I've had yet. I served it at a children's birthday party with whipped cream, to great success. The second time I made it with unsalted butter at room temp instead of shortening, and used only 1 cup of sugar. And added a cup of chopped walnuts. Does anyone know what the theory is behind curdling the milk with vinegar?

My grandmothers curdled the milk in this way because buying buttermilk just for this use was costly on a tight 1930s budget. It's a quick way to acidify sweet milk for the recipe. I'm so happy you enjoyed it.

Ha. I had the buttermilk on hand and was like "Should I? Shouldn't I ?!" It's always a battle to use up the buttermilk in time.

I do think that buttermilk changes the flavor of the bread, so I always make it the way my grandmothers did, with white vinegar and sweet milk.

made this last night for a dinner party...used my own banana bread recipe and this dessert was amazing!!! i didn't have any whisky, but it still turned out fantastic. will definitely make this again!

This was a great recipe, even without the 'gussy up' steps. One error in the directions in case you want to fix them: adding the eggs wasn't mentioned. I didn't have apple sauce on hand, so mashed up a pear. Thanks so much for sharing.
