cream or half and half
nonfat milk (or 1-2% milk)--enough to make 2 cups total liquid when combined with the eggs and 3 oz. of cream. I use non-fat milk since the cream or half and half will make it rich enough.
medium shallot, sliced thinly or leek (white part only, sliced thin)
sliced mushrooms such as Cremini
