• 1 package frozen, all-butter, puff pastry, thawed overnight in refrigerator
• 2 1/2 cups whole milk
• 3 tablespoons cornstarch
• 1 vanilla bean
• 1/2 cup sugar + 2 tablespoons
• 3 extra large egg yolks
• 2 ripe Hass avocados, halved, pitted, and peeled
• 1 tablespoon lime zest+ 2 tablespoons fresh lime juice
• 3 tablespoons unsalted butter, room temperature
• 1/4 teaspoon coarse salt
• 1/2 cup slivered almonds or macadamia nuts, toasted
• Confectioner’s sugar for dusting
