This Rosemary Gin Cocktail smells as wonderful as it tastes and is a sophisticated beverage…this is definitely a drink everyone will enjoy! The recipe originally comes from Creative Culinary and Amy Stafford @ A Healthy Life For Me

What You'll Need
Ingredients
  • Rosemary Syrup
  • 1/4 cup ground rosemary (I used my coffee grinder but a food processor would work)
  • 1/2 cup water
  • 1/2 cup sugar
  • Cocktail
  • 1 1/2 ounces gin
  • 3/4 ounce rosemary syrup
  • 3/4 ounce fresh lemon juice
  • Club soda
  • Spring of rosemary for garnish
Directions
  1. Bring the water to a boil, add the sugar and rosemary and stir until the sugar is dissolved. Remove from heat and steep the mixture off heat for 45 minutes.
  2. Strain the syrup through a fine mesh strainer into a bowl.
  3. Fill glass with ice.
  4. Add gin, lemon, and rosemary simple syrup and stir.
  5. Top with a splash of club soda, stir briefly, and garnish with a rosemary sprig.

As everyone has noticed, balance is the key with recipes like this. Each person will have to tweak it to taste since everyone will be using different varieties of lemons and rosemary. So many to choose from, depending upon where you live or what you grow. Some lemons are more acidic than others and some rosemary varieties more resin-y. The rosemary does not have to go into the grinder unless it's dried, which might taste a little musty. Fresh would be best for this application. Just use a little more of it and mince the needles with a chef's knife, as you would parsley. Woody herbs & spices do not easily give up their essence, so it's necessary to steep the infusion for at least 15 minutes at a VERY LOW simmer. Then off the heat and let it stand for an hour or so. You will have a lovely, deeply flavored syrup.

Made these tonight, but the ratios didn't quite come together for me. On the next batch, maybe I'll try cutting back on the lemon like some of the other commenters suggested. The rosemary syrup will definitely be put to some good use.

I made the rosemary syrup a couple of weeks ago. My friend and I gave the drinks a test drive on the weekend while enjoying the first deck time of the year. I cut back the lemon juice to about a tablespoon per drink. It was fantastic.

I'll definitely be making more rosemary syrup - maybe even tonight since I have some fresh rosemary languishing in my veggie drawer.

Just made this. It's a nice drink. For my taste a tad too sweet and a tad too lemony. Next time (tomorrow?!) I'll adjust the ratios. I did swap out the club soda for some prosecco, which I thought was a nice move on my part.

I've never made a simple syrup with ground herb--does using a couple whole sprigs of rosemary going to produce a less intense syrup? Does the ground fresh rosemary strain out, or is the straining for big bits...

Silly question, regarding the syrup, it should be dried Rosemary, right?

Mr. Vittles, I used fresh. It gives it a more vibrant taste.
