Author Notes: Almost bland but yummilicious. Food for the body. The thing i enjoy about making this dish is, it is simple to make, plus plantain, coconut and dates together has nutrients the body needs. I can also drizzle pure maple syrup (unrefined sugar) on top if the body asks for it. Enjoy! —JuneRoca
Serves 1 - 2
- 1 piece ripe plantain
- 1 cup mature coconut meat cut into pieces (dark skin removed with a peeler)
- 3/4 cup soaked dates
- Procedure: Wash the plantain Dry with a paper towel Cut the ends Score in the middle with a knife to release the steam when cooking Microwave the plantain for 2 minutes on high Cut into bite size pieces Put all ingredients in a food processor Process until mixed thoroughly Serve in a plate Garnish with pistachios and goji berries (raisins is okay to use too ) Sprinkle with cacao powder or dried coconuts
