g Pitted Dates

g Coconut sugar

Fresh nutmeg

Dark Maple Syrup

Directions

100g of pecans put in a processor and whizz until fine. Boil dates in a large amount of water until very soft.. Drain and whizz in the processor until smooth. Leave to cool.

Heat oven to 180º. Beat the butter, sugar, salt and nutmeg together until creamy, then tip in the dates, ground pecans, eggs and beat a bit more.

Fold in the flour then spoon into the tin. Sprinkle the remaining nuts over the top.
Bake for 40 min. Drizzle with maple syrup. Serve warm. Enjoy!
