g Pitted Dates
g Coconut sugar
teaspoon Fresh nutmeg
g Self raising flour
Dark Maple Syrup
teaspoon Sea salt
- 100g of pecans put in a processor and whizz until fine. Boil dates in a large amount of water until very soft.. Drain and whizz in the processor until smooth. Leave to cool.
- Heat oven to 180º. Beat the butter, sugar, salt and nutmeg together until creamy, then tip in the dates, ground pecans, eggs and beat a bit more.
- Fold in the flour then spoon into the tin. Sprinkle the remaining nuts over the top. Bake for 40 min. Drizzle with maple syrup. Serve warm. Enjoy!
