Apple and Olive Oil Pie for Very Merry Christmas

One of the most delicious surprises we lately had in our kitchen! Once again my guide was Yotam and his first book. But I love making my pies white flour and refined sugar free. So I have made my healthy alterations keeping it´s best taste and texture. Moist but light and fluffy, very Christmassy and delicious. Give it a try, you won´t regret :) —Ausra de Araujo

  • Serves 12
  • 140 g oat flour
  • 140 g corn flour
  • 80 g sultanas
  • 150 g dried pitted dates
  • 1/2 teaspoon Ceylon cinnamon
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons baking soda
  • 120 milliliters raw olive oil
  • 70 g coconut sugar
  • 3 free range eggs
  • 3 apples
  • 1/2 teaspoon vanilla powder
  • 1/2 sea Salt
  • Zest of 1 lemon
  • butter to grease the tin
In This Recipe
  1. Boil sultanas and dates for 5 min in water, strain and blent till smooth and unique paste.
  2. Peel and slice apples.
  3. Mix all the dry ingredients.
  4. Beat the eggs and mix into the dry ingredients. Add Sultanas,dates paste and lemon zest. Stir carefully.
  5. Bake for 20 min @ 180º. Do not try it warm. Let it cool for at least 2 hours. My very personal but I think important advice:) Baking this pie for the next day consumption is ideal. Enjoy!

I would like the same info, but also, when do you put the apples in? Never mentions the apples except to peel and slice. The image offers no clue.

aApple & olive oil pie: Can you help with the conversions to USA measures and the size of the pan and the 20min @ 180 degrees ? I would love to make this even though it is not holiday season but I really need some help. Thank you, Elvira
