It is frigid in Minnesota right now, and a conversation with my best friend, who now lives in San Diego, left me craving a little California sunshine. So, I blended together avocado, citrus, and coconut for a hit of sunshine in spoonable form. —fiveandspice

What You'll Need
Ingredients
  • 1 whole avocado
  • 1 banana (frozen, if desired)
  • 1/2 cup orange juice (the first time I made this I used a couple whole, peeled clementines, which was also good albeit a little pulpy)
  • 2 tablespoons fresh lime juice
  • 1 cup full fat coconut milk
  • 1 pinch salt
Directions
  1. Peel and pit the avocado, and cut it into chunks. Peel the banana and break it into chunks.
  2. Combine everything in a blender and blend until smooth - about one minute. (If you'd like more sweetness you can add a little honey.) Divide between two large cups or bowls and serve.

Made this with a peeled navel Orange and a peeled small lime instead of juice. Also added about a cup of kale and used soy milk instead of coconut milk. Blended in my BlendTec, it made a nice creamy pudding, heavy on the citrus taste. Very tasty. Will likely make again

So sorry to take forever to respond to your question! I'm rather behind on things these days! Anyway, you might try frozen mango chunks. I think that would be good.

You can use dates as a replacement in almost any smoothies. It's mostly for the sweetness. It's 3-6 dates for one banana's worth

where do you find full fat coconut milk? Brand?

I use coconut milk from a can. I usually use Thai Kitchen Organic brand or there's a brand called Native Forest and another called Arroy-D that both make good canned coconut milk.

Just made this and I love it! So creamy! Thanks for sharing. I know just how you feel as I am a native Minnesotan now living in New York. Def do not miss the winters there!
