Raw Buckwheat Breakfast Porridge

This recipe has all of the satisfaction and comfort of hot cereal, sans heat, which makes it perfect for summer. Feel free to get creative with toppings and mix-ins! —Gena Hamshaw

What You'll Need
Ingredients
  • 2 cups raw buckwheat groats, soaked overnight, drained, and rinsed
  • 1 cup almond milk
  • 1/4 cup maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract, or 1 vanilla bean, seeds scraped out
  • 1 tablespoon ground flax meal
  • 1 pinch sea salt
  • 1/3 cup shredded, unsweetened coconut
Directions
  1. Place the buckwheat groats in a food processor and pulse a few times to break down. add the almond milk, maple syrup, cinnamon, vanilla bean, flax, and sea salt, and process till the mixture has a smooth consistency (but with some texture remaining).
  2. Pulse in the coconut and adjust seasonings. Divide porridge into four bowls and serve, topped with fresh berries, chopped nuts, or sliced bananas.

I was skeptical but have to admit that I liked this more than I though I would. The only issue is that it really does not keep long in the fridge. The amount the recipe yielded would've been enough for a 4 days of breakfast for me. I made it on Monday and on Friday it was definitely not good anymore and possibly event on Thursday already. The only limit to keep in mind for me. Otherwise, good healthy recipe.

I made this and while the texture took a bit to get used to the entire family enjoyed it, even the toddler (he asked for seconds!). I added strawberries on top and it was great.

I had some coconut milk to use up so I decided to give this recipe a try this morning, even though it's not exactly a winter dish. I quartered the recipe, since I was only making it for myself, and it worked well in the smaller quantity. I used the coconut milk in place of the almond milk and I enjoyed the extra coconut flavor with the blended groats. As the recipe suggest, some berries and nuts on top (which unfortunately I didn't have on hand) would have been a great addition to help change up the texture a bit. Still, it was filling and tasty and I will absolutely make this again!.

This tastes like uncooked batter of some kind. Anyone find that the flavor and texture to taste like muffin batter?

I was convinced that grains always need to be cooked. Is is OK to eat them raw? Even if they are blended they still are raw.

I love buckwheat groats, so I made this yesterday. I only had a cup of groats, but I found that after soaking, they had more than doubled -- much more. 2 cups would've been a huge amount! Are the quantities correct?

I order my Bob's red mill unsweetened coconut & buckwheat groats on Amazon...buy in bulk to save because I too have quite a trek to a health food store&/out whole foods

I have never seen 'unsweetened' coconut at the grocer, without buying a real coconut, not to mention raw buckwheat groats. I imagine Whole Foods would carry these items, perhaps, but that's a two-hour commute for me. Are there mail order or other suggestions you might offer where I can find these items, and others like them?

I have subbed the sweetened coconut for the unsweetened and it works just as well, but you'd likely want to adjust down the level of maple syrup, so it's not TOO sweet.

Steve, you would definitely need to visit Whole Foods or a natural grocery to find raw buckwheat groats, but a much easier way would be to buy some in bulk online! Amazon and Vitacost both have great prices on pantry items like groats and shredded coconut. They typically offer free shipping and no more expensive than WF.

Bob's Red Mill has unsweetened coconut and Buckwheat groat. I can find it in a regular grocery store with the other Bob's Red Mill products as well as at the local health food store without having to trek down to the Whole Foods in my area.
