School Morning Muesli

A simple, fresh, partly premade cereal alternative for those hectic weekday mornings. —Nicholas Day

What You'll Need
Ingredients
  • 1 cup rolled oats
  • 1 cup milk
  • 1/4 cup dried cranberries, roughly chopped
  • 1 apple, grated or roughly chopped
  • 1 peach or nectarine, roughly chopped
  • 1/4 almonds, roughly chopped
  • Honey (optional)
Directions
  1. The night before, mix together the oats and the dried cranberries and then stir in the milk. Cover and refrigerate overnight.
  2. In the morning, remove the soaked oats from the fridge and toss with the apple and the peach or nectarine. Serve in individual bowls with the chopped almonds on top plus a drizzle of honey, if desired.

A simple combination and so delicious-

This is just like bircher muesli. It is never served warm. You can use any kind of oat --- quick, instant, or whole rolled. All will soften overnight (although whole rolled will soften the least and retain more chewiness).

I come from a part of the country where grains come in different speeds (quick, instant, etc.) -- so should this recipe be made with old fashioned (non-quick-cooking) oats? It seems like the texture of the final product would be more pleasing, but maybe I'm missing something?

overnight oats the best, and almost a daily tradition for me now. i actually make mine with water - which sounds sad and spartan, but is actually much more than the sum of its parts. before bed i cover a bowl of oats with cold water and leave to soak in the fridge. in the morning they're topped with julienned apple, almonds, raisins, honey, and other silly add-ins if i have them: chia, bee pollen, matcha powder, that ilk.
