Blueberry-Lime Agua Fresca

This blend of ripe blueberries, fresh lime juice, sparkling water, and agave syrup, is a refreshing drink to sip on all summer.

Sparkling water is especially refreshing, but still works fine, too.

I like light agave syrup for its neutral flavor, but you could use any number of sweeteners here: sugar, honey, coconut sugar, maple syrup, etc. When using sugar or coconut sugar, heat it with 1 cup of the water until it dissolves before adding it to the blueberry purée. —Alexandra Stafford

What You'll Need
Ingredients
  • 8 cups blueberries, rinsed and stemmed
  • 6.25 cups sparkling water (two 750-ml bottles of Pellegrino), see notes above
  • 1/4 to 1/3 cups fresh lime juice
  • 1/4 to 1/3 cups light agave syrup, see notes above
  • fresh mint sprigs for garnishes
  • ice for serving
Directions
  1. Purée the blueberries in a food processor or blender with one cup of the water until smooth. Pass the purée through a fine-meshed sieve held over a large bowl. (Note: If you are using a high-powered blender such as a Vitamix, you may not need to use a sieve.) Press with a spatula to help the purée pass through the sieve. If necessary, add water to help loosen the purée to make it pass more easily. Once you are left with a considerable mass of blueberry solids in the sieve, return it to the food processor or blender and purée with another cup of water. Pass this mixture though the sieve one more time.
  2. Add the remaining water to the bowl with the blueberry purée. Add 1/4 cup of lime juice and 1/4 cup of agave syrup and stir to combine. Taste. Adjust with more lime juice or agave syrup by the tablespoon to taste, adding as much as 1/3 cup of each total. Transfer agua fresca to large pitcher.
  3. Fill glasses with ice. Nestle in mint sprigs. Pour in the blueberry agua fresca.
