Spicy-Sweet Carrot Smoothie

Not quite carrot cake, not quite tropical, and a very good way to get a vegetable down at the top of the day.

This smoothie is lightly sweet on its own, but if you do like things on the sweeter side, add a tablespoon or so of honey or agave syrup or a pitted date soaked in hot water to soften when you blend. —Caroline Lange

What You'll Need
Ingredients
  • 1 cup cold milk
  • 2 tablespoons oats
  • 1 nub ginger about the size of your thumb's top knuckle, peeled
  • 2 medium carrots, coarsely grated (about 1 cup)
  • 1/2 cup frozen pineapple cubes
  • 1/2 frozen banana, sliced
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon turmeric
  • Grind of black pepper
Directions
  1. Pile all of the ingredients into a blender (in this order!) and blitz until thoroughly blended and creamy. Divide between two glasses and drink up.

I always have these ingredients on hand, so this might become my go-to smoothie from now on. Next time I might add a date or two to make it a tad sweeter.

I add ice since I rarely have frozen banana, and I use oat milk, which picks up on the oat taste. Really delicious!

This was tasty! A tiny bit grainy, I guess from the oats, but surprisingly filling and so perfect for a fall morning. Yum!

Great recipe. I have modified it a bit to my taste but the original is good too. I now use spinach and cooked beets instead of the carrot, fresh turmeric instead of ground, unsweetened almond milk, and no cinnamon. I do use the date and also add protein powder, matcha and maca too. Best breakfast! Note: frozen peaches and apples can work if you are out of pineapple but pineapple is best.
