Carnitas tenderloin tacos

We are making tender carnitas tenderloin tacos with soft vegan flatbread. Nice crispy carnitas with soft flatbread tacos. Simple and easy. Lets get started! —The Tortilla Channel

  • Serves 2
Ingredients
  • 300 grams tenderloin
  • 4 soft vegan flatbread or regular tacos
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 tablespoon lemon juice
  • 2 tablespoons orange juice
  • 1 small onion chopped
  • 3 cloves of garlic
  • 1 small beef stock cube crumbled
  • 4 tablespoons soy sauce
  • cups water
  • ½ finely sliced bell pepper for decorating

Directions
  1. Pre heat oven at 425℉
  2. Cut tenderloin in three equal parts and season with cumin and oregano
  3. Put in ceramic pan or Dutch oven
  4. Add lemon juice, orange juice, chopped onion, garlic, stock cube, soy sauce and water
  5. Put in the oven an cook for 60 minutes
  6. Check half way through, turn tenderloin and add some water to keep it covered
  7. Take tenderloin and shred
  8. Heat a skillet and pan fry the carnitas and add 4 to 5 tbsp of gravy to make the meat crispy
  9. Warm the soft flat wrapped in aluminium foil in the oven
  10. Plate the taco and decorate with some red bell peppers and gravy
