Author Notes: This is a glammy gorgeous, slightly old-school (in the best possible way) center center piece dessert that is easier to make than it looks. You can omit the kirsch if you don't want a boozy element. You can swap the cranberry raspberry filling for any fruit preserves (I've even done it with canned chestnut cream!). You can swap your favorite chocolate mousses or even lemon mousse for the white chocolate mousse... What a I saying? Once you've learned how to put this dessert together, you can mix and match most of the elements to create your own signature bombe. This one is adapted from my first book, (and 1990 James Beard Cookbook of the Year award winner), Cocolat; Extraordinary Chocolate Desserts. Bombes away! —Alice Medrich
