Roasted Grape + Ricotta + Thyme Toast

The idea for this toast was birthed after seeing a particularly beautiful food photo. I found the image randomly while perusing Pinterest one afternoon and was immediately intrigued. The luxurious depth of purple coupled with harmonious hues of green caught my eye immediately. Color can do that... it can evoke things within us. Perhaps that is why beautiful food matters so much; it creates both a visual and an emotional reaction. This toast is a simple one, but pulls on color theory and beauty to create both a visually and taste-bud pleasing bite.

What You'll Need
Ingredients
  • 4 slices good bread
  • 1 cup red grapes
  • 4-5 sprigs fresh thyme
  • 1/4 cup ricotta
  • Honey, optional
  • Olive oil to drizzle
Directions
  1. Preheat your oven to 400 ̊F.
  2. Cut your grapes in half and set aside.
  3. Spray a baking sheet with non-stick spray and arrange your bread on top. Spread each slice with 1 tablespoon ricotta. Evenly distribute the sliced grapes across the toasts, then drizzle each with a bit of olive oil. Bake for 10-12 minutes, or until the grapes begin to blister and the edges of your toasts are golden.
  4. Remove from the oven. Sprinkle with your sprigs of fresh thyme, and if you’d like some extra sweetness, drizzle with honey.
  5. TIP: I like to buy large batches of grapes and freeze them if I can’t eat them all before they go bad. Frozen grapes work perfectly fine on this toast - just add a few minutes to the cooking time!

I saved this recipe because the photo was just beautiful. I finally got around to making it, and it is amazing. What a simple and delicious breakfast, snack, or lunch item. Would be lovely to serve at a brunch.
