Coriander rice recipe is a lip-smacking recipe from the streets of Mumbai. The essence of the recipe is freshly chopped coriander and more importantly the coriander stems.
1 Cup Cooked Rice
1 Small Bunch Coriander Leaves, Finely Chopped
Coriander Stems, Finely Chopped
1½ Tbsp Oil
1 Tsp Mustard Seeds
1 Tsp Urad Dal (Black Gram Skinned)
1 Tsp Chana Dal (Bengal Gram Spilt and Skinned)
2 Fresh Chillies (Green and Red), Finely Chopped
- Heat oil in the pan
- TIP: One can also use ghee instead of oil for a better flavour
- Add mustard seeds
- TIP: One can also add garlic as per their palette
- Add urad dal
- Add corainder stems
- Mix well
- Add salt
- Cook for a couple of minutes
- TIP:If finely chopping the coriander, use immediately to avoid darkening of the leaves. Else, place in water till used.
