Tomato Pie-A Utica, NY Classic

A delicious "pizza like" pie made with homemade pizza dough, and topped with extra tomato sauce, Parmesan cheese, and oregano. Perfect snack, and great for kids' lunches. —Dash of Amy

  • Prep time 1 hour 8 minutes
  • Cook time 15 minutes

Ingredients
  • Pizza Dough
  • 1 cup water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 3 cups flour
  • 2 teaspoons yeast
  • Toppings
  • 1-2 cups Ragu Traditional sauce
  • 1/3-1/2 cups Parmesan, Romano, Asiago cheese blend (divided)
  • 1/2 teaspoon oregano
  • 2-3 tablespoons butter, softened

Directions
  1. Place pizza dough ingredients in a stand mixer, turn to setting number 2, and allow to knead for 8 minutes.
  2. After the 8 minutes, take the dough out, shape it into a ball, and place it back in the mixing bowl after spraying it with some cooking spray.
  3. Let the dough rise for one hour.
  4. Using a paper towel coat an 11x17 baking pan with butter.
  5. Hold the dough up and allow it to stretch, then place it on the baking sheet and press it evenly to the edges of the pan using your hands.
  6. Spread about 1/2 cup of sauce over the dough in a light layer, and sprinkle with about 1-2 tablespoons of Parmesan cheese.
  7. Bake at 425* for 6 minutes.
  8. Pour about one cup more of sauce over the dough so it's pretty saucy.
  9. Sprinkle with 2-3 more tablespoons of Parmesan cheese, and oregano.
  10. Bake an additional 9 minutes. Tomato Pie can be enjoyed at room temperature.

Boy, was that a throwback to home! Grew up in Whitesboro and it wasn't a party without tomato pie! Made this last week and it was phenomenal. Just put the second batch of dough in the oven on the proofing setting to rise. The first one went so quickly that I almost didn't get any! Thanks, again!

Lost ya once you said "Ragu". We successfully made this once. And that time it came out real nice. We use regular tomato sauce, not pasta sauce. I just got back from the store and picked up some San Marzano tomatoes which we will cook up and ensure it is of a pureed texture, and mix with a small amount of generic tomato sauce. Not even pizza sauce. Somewhere I have the original recipe. But for now I'll just reinvent it, with the same toppings you listed: grated romano and a spritz of oregano. I miss this from Utica. If desperate, I can order 2 for about $70 shipped overnight.

Thanks for the feedback. I prefer everything homemade, but I wanted to present a quick at home tomato pie. Ragu is actually pretty good for this recipe. If you do find the original recipe, I'd love if you share it with me. Such a satisfying treat!

Will do! Whatever recipe we used back around 2005 was spot on! Good luck with me finding it! Wife had it-- somewhere, but working for the military, we moved a few times since then. Glad someone else loves tomato pie! (I use Prego Traditional to replicate Pizza Hut Cavatini Supreme, which is no longer made.)
