Vanilla "Cake" Balls

Author Notes: This deliciously healthy recipe courtesy of California Toddler is the perfect way to let kids have their cake and eat it too. By incorporating Healthy Height shake mix for maximum nutrition and protein these balls are easy to make, delicious, and WAY healthier than your average sweet treat. Gina Petraglia

Makes: 12 balls
Prep time: 30 min

Ingredients

  • 1 cup old fashioned rolled oats (ground- you can do this in any blender)
  • 1/3 cup Almond Butter (can sub for another nut butter or sunflower seed butter for nut-free families/schools)
  • 2 tablespoons Almond Butter (can sub for another nut butter or sunflower seed butter for nut-free families/schools)
  • 1/4 cup Unsweetened coconut shreds
  • 1/8 cup Maple syrup
  • 1 Scoop Vanilla Healthy Height Shake Mix (includes 12g of protein)

Directions

  1. Blend oats until smooth.
  2. Measure out your ingredients.
  3. Mix together the dry ingredients in one bowl and the wet in another bowl (all expect the water).
  4. Mix the dry and wet ingredients together to form your dough- add in the water as needed to create a dough that can be rolled together without flaking apart.
  5. Roll dough into balls.
  6. Store in fridge for up to a week and in freezer for up to 3 months!
