Author Notes: Japanese style fried chickens braised with sweet savory umami packed daikon sauce.Hidemi

Serves: 2-3
Prep time: 15 min
Cook time: 30 min

  • 3 Boneless skinless chicken thighs (total 1.5 lb.)
  • 1 tablespoon Sake
  • 1/8 teaspoon Salt
  • 2 Scallions
  • Cornstarch for coating chickens
  • Canola oil for frying chickens
  • 1 Daikon, 4-inch length
  • 1 tablespoon Sake
  • 5 tablespoons Soy sauce
  • 2 tablespoons Mirin
  • 2 teaspoons Sugar
  • 1 teaspoon Grated fresh ginger
  • 4 tablespoons Water
  1. Cut chicken thighs into bite size and put into a bowl with 1 tablespoon of sake and salt. Massage the chickens to coat the sake mixture well. Let sit for 10 minutes.
  2. Chop scallions. Reserve some of green parts for serving.
  3. Peel and grate daikon into a bowl. Add soy sauce, 1 tablespoon of sake, mirin, sugar, ginger and water. Mix to combine.
  4. After 10 minutes, heat oil in a wok or deep skillet to medium heat. Work in batches. Coat chickens with cornstarch and fry chickens until cooked through and golden brown. Drain on paper towels lined plate
  5. In a large pot, put daikon mixture and heat over medium heat. When it starts to be warmed up, add fried chickens and mix gently to combine. Simmer for 2-3 minutes. Add scallions (reserve some of green parts for serving) to the pot and mix gently to combine.
  6. Put the chickens into a large serving platter or individual platters, sprinkle with reserved scallions over the top.
