Mediterranean Veggie Sandwiches

Cheese, tomatoes, garlic, and mushrooms - all ingredients with lots of natural umami flavor! This sandwich combines mediterranean/middle-eastern flavors with simple veggies for an easy yet delicious sandwich. I make variations of this all the time in the mornings before high school.   • Prep time 5 minutes
  • Cook time 10 minutes
  • Makes 3 sandwiches
  • 6 pieces bread
  • 2 handfuls spinach
  • 1 cup mushrooms, sliced
  • 3/4 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/4 teaspoon cinnamon
  • 1/2 tablespoon tomato paste
  • 4 ounces feta cheese or dairy free alternative
  • 1/4 cup olive tapenade or chopped olives
  • salt
  • olive oil
In This Recipe
  1. In a pan with 2 -3 tbs. of olive oil add in spices, garlic, and tomato paste on medium-low heat and stir until aromatic.
  2. Add onions and cook until translucent, about 3 - 5 minutes.
  3. Add mushrooms and cook until tender, about 3 - 5 minutes.
  4. Stir in spinach until it wilts and add salt to taste.
  5. On a slice of bread, spread tapenade, add vegetable mixture, sprinkle with feta cheese, and top with slice of bread.
