Gut Friendly Salmon Tacos With Prebiotics

Author Notes: Here is your new favorite healthy taco recipe! The delectable salmon crust incorporates Barley+, a muesli which contains all three types of high quality fiber your body needs. And by combining the goodness off omega-3’s, vitamins and minerals found in salmon with a prebiotic fiber crust that is good for gut and waistline this taco recipe will satisfy your craving and save your diet! Ingredients

  • 1 1/3 cups maple and nut Barley+ muesli crushed
  • 1/4 cup cup olive oil, divided
  • 2 tablespoons finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh thyme
  • 2 teaspoons finely chopped fresh rosemary
  • 2 cloves garlic
  • 1/2 teaspoon paprika
  • 1/4 teaspoon fennel seeds, crushed
  • 1/2 teaspoon each salt and pepper, divided
  • 1 pinch hot pepper flakes
  • 2 tablespoons Dijon mustard
  • 6 salmon fillets (5 oz each)

Directions

  1. Preheat oven to 425˚F. Stir together muesli, 2 tbsp olive oil, parsley, thyme, rosemary, garlic, paprika, fennel, half of the salt and pepper, Barley+ Muesli and hot pepper flakes. Spread mustard on top of each fillet. Coat in muesli mixture; and bake for 10 – 20 minutes depending on how you like your salmon.
  2. While the salmon is baking, heat up your tortillas and set up your sliced cabbage, diced tomatoes, and sliced avocado.
  3. Once Salmon is cooked to desired taste you can cut into smaller portions.
  4. Finally, heat up your tortillas. 20 – 30 seconds in the microwave usually does it!
  5. Now you’re ready to create your own gut friendly Salmon Tacos.
