Lasagna Bake

A mock lasagna made with rotini pasta, cream cheese, cottage cheese, and homemade meat sauce. It's simple to make, and a definate crowd pleaser! Perfect for pot lucks. —Dash of Amy

  • Cook time 45 minutes
  • Serves 12-16
  • Meat Sauce
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 56 ounces crushed tomatoes
  • 16 ounces tomato sauce
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 teaspoon parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 garlic cloves, minced
  • 2 teaspoons sugar
  • Pasta
  • 16 ounces rotini pasta, cooked and strained
  • 8 ounces softened cream cheese
  • 16 ounces cottage cheese
  • 1 teaspoon salt
  • 1/3 cup Parmesan cheese
  • 12 ounces shredded mozzarella cheese

  1. Meat Sauce
  2. Heat a large stock pot over medium heat, and add the olive oil and beef.
  3. Cook until the beef is cooked through, stirring often and breaking up the meat.
  4. Add the canned tomatoes, seasonings, and garlic; mix well.
  5. Let the sauce lightly boil for about 10 minutes, then remove from heat.
  1. Pasta
  2. Mix the cooked, hot pasta with the cream cheese, cottage cheese, and salt.
  3. Cover the bottom of a large baking dish with the meat sauce, about 2 ladles full.
  4. Next, top with half of the pasta mixture and spread so it's even.
  5. Sprinkle with about 3-4 Tbsp of Parmesan cheese, and 4-6 ounces of mozzarella.
  6. Pour more meat sauce over the first layer of pasta to cover it.
  7. Add the remaining pasta evenly over the top, then sprinkle with 3-4 tbsp Parmesan cheese.
  8. Add the remaining sauce, then sprinkle with the mozzarella cheese.
  9. Cover with foil, and bake at 350* for 25 minutes.
  10. Remove foil, and broil for about 5 minutes until cheese is lighly browned and bubbly. Cut into squares.
