Chocolate Coconut Shortbread Bars

Looking for a delicious new dessert to try out this weekend? Look no further than these delectably chewy, chocolate-y, coconut-y shortbread bars! Made with few ingredients including decadent chocolate chips and crunchy sweet coconut chips. We used Enjoy Life baking chocolate chips which are dairy-free, gluten-free, soy-free and nut-free. We also used bare Snacks Toasted Coconut Chips for the perfect crunchy texture and flavor. Bare's chips are baked, never fried with no added oils, making them a light addition to the top of these bars. With only 5 ingredients, these bars are simple to make and eat. Enjoy! —Contributor

  • Cook time 30 minutes
  • Serves 9
  • 3 cups all-purpose flour
  • 1 1/2 cups butter
  • 3/4 cup sugar
  • 1 cup semi-sweet chocolate chips, divided
  • 1 bag bare Snacks Toasted Coconut Chips, lightly crushed
In This Recipe
  1. Preheat the oven to 350 degrees & spray a 9'' baking pan with cooking spray. Set aside.
  2. In a medium-sized bowl, mix together flour, butter and sugar until combined. Press this mixture into the bottom of the pan.
  3. Sprinkle 1/2 cup of chocolate chips on top and gently press them into the dough and bake for 28 minutes.
  4. Sprinkle the other 1/2 cup of chocolate chips and lightly crushed coconut chips on top of the shortbread bars. Bake for an additional 3 minutes, until the chocolate is slightly melted.
  5. Let cool for 10 minutes then cut them into bars. Once chocolate has set, store the bars in an airtight container.
