Earl Grey Masa Olive Oil Muffins

Author Notes: This recipe was adapted from the Maialino's Olive Oil Cake recipe on Food52. I've been trying to incorporate masa harina into cakes and muffins because of its subtle corn flavor and because substituting some for wheat flour reduces gluten formation, which yields a lighter, fluffier muffin. The earl grey-infused milk complements the orange flavor nicely, and rather than buy a bottle of Grand Marnier for the 1/4 cup called for in the original recipe, I used the next-most intensely citrus-flavored item in our pantry: marmalade. The muffins (and mini-cakes, which I made with leftover batter) were tender, fragrant, and gone within the day! Anita L.

  • 1 1/4 cups all-purpose flour
  • 3/4 cup masa harina
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons kosher salt
  • 1 1/2 cups sugar
  • 4 teaspoons earl grey tea blend
  • 1 1/4 cups almond milk
  • 3 large eggs
  • 1 1/3 cups olive oil
  • 1 1/2 tablespoons grated orange zest
  • 1/4 cup fresh orange juice
  • 1/8 cup marmalade
  • 1/8 cup water
  • 1 blood orange (optional, for decoration)

  1. Preheat the oven to 350° F. Grease two muffin pans.
  2. In a small pot, heat the almond milk on medium-low heat and add tea leaves. Allow to steep for 5 minutes, then remove from heat and set aside to cool.
  3. In a bowl, mix together the flour, masa harina, sugar, salt, baking soda and powder. In another bowl, whisk the olive oil, eggs, orange zest and juice, marmalade, and water; strain the tea-infused almond milk into the mixture once it's lukewarm, and mix well.
  4. Pour the wet ingredients into the dry ingredients and fold until just combined. (The batter will be a little lumpy; that's okay.)
  5. Pour the batter into the greased muffin pans. Garnish with thin slices of blood orange and bake for 18-20 minutes.
  6. Allow to cool for at least 15 minutes before removing from the muffin tins--the muffins will be delicate, so be gentle!
