Triple-Coconut Black Pearl Mango Sticky Rice

  • 1 packet Lundberg Organic Black Pearl Rice (16 oz.)
  • 2 cans full-fat coconut milk
  • 1 mini can coconut cream
  • 1/2 cup sugar
  • 5 cups water
  • 3 large ripe mangoes (cubed)
  • 8 2-bite coconut macaroons (gently crumbled)

  1. In a large pot, add black pearl rice, water, sugar, and the two cans of coconut cream.
  2. Bring to a boil and let simmer uncovered for at least an hour, or until the liquid has cooked down and the desired consistency has been achieved.
  3. Heat the coconut cream in a small saucepan.
  4. Place a generous scoop of the rice in the center of a white dinner plate.
  5. Encircle with mango cubes and coconut macaroon crumbles.
  6. Drizzle with coconut cream.
  7. Indulge!
