Almond Mushroom Soup

This mushroom soup is enriched with the goodness of almonds. —Roma

  • Prep time 10 minutes
  • Cook time 30 minutes
  • Serves 4
Ingredients
  • 1 cup mushroom, chopped
  • 1/2 cup mushroom, thinly sliced
  • 10 - 12 pieces almonds, blanched
  • 2 cups almond milk
  • 1 teaspoon black pepper, freshly crushed
  • salt, to taste
  • water, to adjust consistency
  • 4- 5 pieces almonds, blanched & slivered

Directions
  1. Heat olive oil in a pan and cook garlic till fragrant. Now add and sauté the chopped mushrooms till well cooked. Keep aside.
  2. Next, in the same pan, sauté the sliced mushrooms. Keep aside.
  3. Lastly, pour the blended mixture in a pan and bring to boil. Add salt to taste and freshly crushed black pepper. Also, add the sliced sautéed mushrooms.Bring to a boil.
  4. Once it comes to boil, serve garnished with slivered almonds.
