Watermelon Mint Popsicles

Super refreshing popsicles you can make at home with just a few simple ingredients! One of my favorite things about these is the mint syrup you make to mix in. It’s sooo good and can be used in many other places! Lattes, other popsicles, frostings, etc. —Becky - The Fig Jar

  • Prep time 30 minutes
  • Cook time 5 minutes
  • Makes 10
  • Popsicles
  • 6 cups Fresh watermelon (cut into chunks)
  • 1/4 cup Lime juice
  • 1/4 cup Mint syrup
  • Mint syrup
  • 1/2 cup Sugar
  • 1/2 cup Fresh mint leaves
  • 1/2 cup Water
In This Recipe
  1. Start by making the mint syrup: add mint leaves, sugar and water to a small sauce pan and turn heat to medium. Allow to cook until it comes to a boil, allow it to boil for about a minute then remove from the heat and let steep while you prep the rest. Strain out the leaves when you are ready to add to the popsicle mixture.
  2. Place cut watermelon in a blender and blend until it becomes liquid. You shouldn’t need any water.
  3. Mix watermelon liquid, lime juice and 1/4 cup of mint syrup. Taste and add more mint syrup or lime juice if desired.
  4. Pour the mixture into popsicle molds and freeze for at least 6 hours.
  5. Enjoy!
