These vegan brownies are soft, cakey, and very chocolaty. If you're looking for a healthier but tasty treat, this one is for you since it's sweetened only with maple syrup.
I topped it with pistachios, cashews, and dried cranberries, but any combination of dried fruits and nuts works great here.
Wonderful paired with a cup of coffee. —Elina
1 18-cm square pan
All-purpose flour (whole wheat or a mix works too)
Dark chocolate chips
Dried fruit and nuts of your choice
100 to 150 milliliters
Maple syrup, depending on desired sweetness
Plant-based vanilla yogurt (almond or coconut works best)
Preheat the oven to 180°C/350°F. Grease and line the pan
Mix together the all the dry ingredients except for the chocolate chips and dried fruit/nuts in one bowl, and all the wet ingredients in another
Add the wet ingredient mixture to the bowl with the dry mixture and mix with a spatula. Fold in the chocolate chips
Transfer the mixture to the baking pan, flatten and smooth the batter using the spatula, and top it with the dried fruit and nuts
Bake in the preheated oven for 30 minutes. After baking, when the brownie has cooled until just warm cover it lightly with cling film to prevent it from drying out while it cools further until ready to serve
