Vegan fruit and nut brownies

These vegan brownies are soft, cakey, and very chocolaty. If you're looking for a healthier but tasty treat, this one is for you since it's sweetened only with maple syrup.
I topped it with pistachios, cashews, and dried cranberries, but any combination of dried fruits and nuts works great here.
Wonderful paired with a cup of coffee. —Elina

  • Prep time 10 minutes
  • Cook time 30 minutes
  • Makes 1 18-cm square pan
  • Dry Ingredients
  • 180 grams All-purpose flour (whole wheat or a mix works too)
  • 40 grams Cacao powder
  • 1 teaspoon Baking powder
  • 50 grams Dark chocolate chips
  • 2 handfuls Dried fruit and nuts of your choice
  • Wet Ingredients
  • 100 to 150 milliliters Maple syrup, depending on desired sweetness
  • 100 milliliters Canola oil
  • 150 grams Plant-based vanilla yogurt (almond or coconut works best)
  • 1 teaspoon Vanilla Extract
In This Recipe
  1. Preheat the oven to 180°C/350°F. Grease and line the pan
  2. Mix together the all the dry ingredients except for the chocolate chips and dried fruit/nuts in one bowl, and all the wet ingredients in another
  3. Add the wet ingredient mixture to the bowl with the dry mixture and mix with a spatula. Fold in the chocolate chips
  4. Transfer the mixture to the baking pan, flatten and smooth the batter using the spatula, and top it with the dried fruit and nuts
  5. Bake in the preheated oven for 30 minutes. After baking, when the brownie has cooled until just warm cover it lightly with cling film to prevent it from drying out while it cools further until ready to serve
