Elderberry Caramel

When a friend of mine gifted me elderberry syrup and I concurrently saw Alan Bergo making box elder syrup caramel, an idea popped into my head: how about elderberry syrup caramel? Is that a thing?

I couldn't find much in the way of elderberry caramel recipes online, so decided to develop my own. I was pleased with how they turned out.

Think classic salted caramels, but with tart undertones and a deep purple coloring. —Olivia Leadbetter

  • Prep time 10 minutes
  • Cook time 45 minutes
  • Serves about 30 caramels
Ingredients
  • 1 stick unsalted butter
  • 1 cup granulated sugar
  • 1 cup heavy cream
  • 1 cup light corn syrup
  • 1 cup elderberry syrup
  • 1 pinch salt

Directions
  1. Line a loaf pan or tray with parchment paper or butter and set aside
  2. Combine ingredients in a large, heavy bottomed pot (I use a cast iron dutch oven) with a candy thermometer attached to it
  3. Heat over medium heat until mixture is 240º F (soft ball stage: mixture forms a soft ball when a drop is placed in cold water)
  4. Pour mixture into pan/onto tray.
  5. Let caramel set at room temperature to cool.
  6. Cut into desired size pieces.
  7. Wrap caramels in small squares cut out of parchment paper.
