Ingredients

medium vine-ripened tomatoes, cut into 1 1⁄2" pieces

small cucumber, peeled, halved lengthwise, and sliced crosswise into 1⁄4" pieces

medium white onion, thinly sliced

Kosterina olive oil

dried oregano

Kosher salt and freshly ground black pepper, to taste

feta, cut into thick slabs

kalamata olives

Directions

In a medium bowl, combine the tomatoes, cucumbers, and onions in a bowl.

In a separate smaller bowl, whisk together the oil and oregano; season with salt and pepper.

Pour the olive oil mixture over the cucumber mixture and toss.

Transfer the salad to a serving bowl and top it with the feta and olives.

Garnish with oregano, and season with pepper.
