Olive you.

Castillo de Canena is a family company named after a castle nestled in the hills of the township of Canena in Andalusia. They've been producing olive oil since 1780 and have been internationally recognized.

Their First Day Press oils are some of the most sought after, since they are so limited in quantity. The First Day Press uses olives collected very early in the harvest, which gives them a unique and extra-flavorful profile. What's extra neat about the First Day Press is that the family farmers choose to harvest these olives slightly before they are fully ripe -- waiting would yield riper olives and a much greater quantity of oil, but they choose to prize flavor over volume with this press.

The Arbequina is a dense oil with a balanced and complex profile, a green olive fruitiness, and vegetable aromas, especially almond and artichoke. The sweetness stands out with a slight astringency.

The Picual is a deep green oil with an intense fresh fruitiness and notes of green grass, herbs, and almond. It's moderately bitter with more pungency than the Arbequina.

Hoover, AL
Raposos Gourmet & Tapas serves up authentic, delicious goods straight from the Iberian Peninsula. The family started out distributing gourmet food in Spain, then expanded to the United States market when their sons came here to study in 1995. Every time we take a bite of homemade tapas, we're grateful for their educational pursuit across the Atlantic.
