King Arthur's rye flour has the germ and some of the bran removed; use it for hearty rye breads and rolls. The organic pumpernickel flour is made from the entire rye berry (including the bran and the germ) -- this gives it a nuttier, darker flavor. Think of pumpernickel as the rye equivalent of whole wheat flour, where rye flour is a little lighter in taste.
