Many breads require specialty, higher-gluten flours in order to get the right rise and texture. These two heritage bread flours -- Red Fife and Red Fife Whole Wheat -- from Hayden Flour Mills are not only grown for bread-baking, but they're also especially flavorful. Red Fife is a wheat variety that was brought to the America's by Eastern European settlers hundreds of years ago. This precious wheat has recently been rediscovered and revitalized, though it is still quite rare. It's a favorite flour among artisan bakers; it's known for its deep flavor and caramel color. We use it in everything from sandwich bread to muffins and cookies.

All our flours are freshly stone milled to order. Freshly stone-milled flour has natural oils that are best preserved in the freezer. Note: Our stone milled heritage flours do not work with bread machines.
